soufflé success.

I’ve never made one before, and hand-beating egg whites was a fucking challenge… but I made this fresh spinach and cheese soufflé my BITCH. Only 1/6th of this is left in a tupperware in the fridge. Roommate and I DEVOURED it. Super proud of myself.
